Easy and Scrumptious Pumpkin Chili

Now that fall is here, I have been grabbing my crockpot at least once a week. Crockpot recipes are so easy and delicious! This pumpkin chili recipe is a classic with a fall twist! Hope you enjoy!

Pumpkin Chili

Ingredients

  • 1 pound of ground beef
  • 1 onion, chopped
  • 1 green bell pepper, diced
  • 2 cloves of garlic, minced
  • 14oz can crushed tomatoes (do not drain)
  • 15oz can pumpkin puree
  • 2 cups diced butternut squash
  • 15oz can of beans, drained (Your choice! I used red kidney beans for mine.)
  • 2 tbsp chili powder
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 2 tsp pumpkin pie spice
  • salt & pepper

Directions

  1. Dice butternut squash, onions, and bell pepper.
  2. Add all ingredients to crock pot, stir together.
  3. Cook on low for 4 to 6 hours.
  4. Season to taste with salt & pepper if needed.

Some chili recipes tell you to brown the meat prior to adding it to the crockpot. This is totally up to you!
